6 c. mixed greens, washed and dried
3 navel or cara cara oranges
1 c. pitted dates, sliced into strips
4 oz. feta cheese (or soft goat)
3/4 c. pistachios, toasted and roughly chopped
2 shallots finely diced (about 3 T.)
1/4 c. white wine, red wine or champagne vinegar
1/2 c. olive oil
1/8 t. orange flower water (opt.)
salt and pepper to taste
Soak shallots in vinegar for 10 minutes. Add the oil, orange flower water, and salt and pepper (expect to add at least 1/2 teaspoon of salt).
To prepare the orange, peel it with a knife, then cut it in half length-wise. Next, with cut side down, slice into quarter inch half moons.
