Mango, Shrimp & Coconut Salad
1 firm large mango, peeled and julienned
½ lb. cooked medium shrimp
½ red onion, thinly sliced
3 T. desiccated coconut, toasted
2 T. mint leaves
2 T. cilantro leaves
½ c toasted cashews
Dressing:
1 t. chili paste
3 T. lime juice
2 T. brown sugar
2 t. fish sauce
Combine dressing ingredients. Toss in all the salad ingredients.
